🌱 QUINOA-CHICKPEA GARLIC-ONION STUFFED MUSHROOMS
(WFPB, SOS-Free, Air Fryer Friendly)

Ingredients:

  • 8–10 large mushrooms (button or cremini), stems removed & chopped

  • 1 small yellow onion, finely chopped

  • 3–4 garlic cloves, minced

  • 1/2 cup cooked quinoa

  • 1/4 cup cooked chickpeas, lightly mashed

  • Splash of veggie broth or water (for sautéing)

  • 1 tbsp nutritional yeast (optional)

  • 1 tbsp fresh parsley or cilantro (optional)

  • Black pepper, smoked paprika, or cumin (to taste)

  • Lemon wedge (for serving)

Instructions:
1️⃣ Clean mushrooms and set aside caps; finely chop stems.
2️⃣ Sauté chopped stems, onion, and garlic in a splash of broth or water for 5–7 minutes until soft.
3️⃣ In a bowl, mix sautéed veggies with quinoa, chickpeas, nutritional yeast, herbs, and seasonings.
4️⃣ Fill mushroom caps with mixture.
5️⃣ Air fry at 375°F (190°C) for 10–12 minutes, until mushrooms are tender and filling is golden.
