Looking for a clean, healing version of pho that aligns with your health goals? This Whole Foods Plant-Based, Salt-Oil-Sugar-Free (SOS-Free) pho recipe delivers all the depth and soul of the traditional Vietnamese noodle soup—without a drop of animal products, processed oils, or added salt. 🙌

I grew up loving pho, but let’s be real: restaurant versions are loaded with sodium, MSG, and meat-based broths. So I created a version that’s just as rich and satisfying—but entirely clean, cruelty-free, and nutrient-packed.

🍜 Ingredients You’ll Need

For the Broth:

  • 1 large yellow onion, halved

  • 4-inch piece fresh ginger, halved lengthwise

  • 1 medium daikon radish, peeled and sliced

  • 2 carrots, chopped

  • 1 cinnamon stick

  • 4 star anise

  • 4 cloves

  • 1 cardamom pod (optional)

  • 1 tbsp fennel seeds

  • 1 tbsp coriander seeds

  • 1 tbsp mushroom powder (like dried shiitake)

  • 8 cups filtered water

  • Fresh cilantro stems and/or green onion tops

  • Optional: 1 tbsp coconut aminos or low-sodium tamari (skip for strict SOS-free)

For the Bowl:

  • Brown rice noodles (100% brown rice)

  • Steamed bok choy or napa cabbage

  • Sautéed shiitake or oyster mushrooms

  • Air-fried or baked tofu (no oil)

  • Bean sprouts

  • Fresh basil, cilantro, mint

  • Jalapeño slices

  • Lime wedges

Optional Hoisin-Style Drizzle (blend until smooth):

  • 2 tbsp date paste

  • 1 tbsp coconut aminos

  • 1 tsp rice vinegar

  • ½ tsp garlic powder

  • ¼ tsp Chinese five spice

🥣 How to Make It

1. Char the aromatics.
Place the onion and ginger cut-side down in a dry pot or on a grill pan. Char until darkened and fragrant, about 4–5 minutes.

2. Simmer the broth.
Add charred onion and ginger, daikon, carrots, spices, mushroom powder, and water to a large pot. Simmer uncovered for 45–60 minutes.

3. Strain.
Remove all solids from the broth. Optional: add coconut aminos or tamari to taste (skip for no-salt).

4. Prep your toppings.
Cook brown rice noodles per package directions. Steam veggies. Sauté mushrooms in water or a dry pan. Air-fry or bake tofu.

5. Assemble.
Add noodles to a bowl, top with tofu, veggies, sprouts, and herbs. Pour over hot broth. Add chili, lime, and optional hoisin-style drizzle. 🥢✨
